Brownie White Chocolate Chunk Cookies

I got this recipe from a co-worker of mine, and it's quickly become one of my most trusted cookie recipes. They always turn out great! They are best made with white chocolate chunks - which I usually get by raiding the grocery store for white chocolate Easter bunnies after Easter weekend.

Ingredients:

1 cup butter or margarine (I use Blue Bonnet margarine for these)
1 cup brown sugar
1 cup white sugar
2 tsp vanilla extract
2 large eggs
2/3 cup cocoa
2 1/4 cups all purpose flour
1 tsp baking soda
1 tsp salt
1lb white chocolate, coarsely chopped

Directions:
Preheat the oven to 325F.
Cream together the margarine and sugars until light and fluffy (about 3 minutes).
Add eggs, one at a time, mixing well after each addition.
Mix in vanilla and cocoa.

Sift together the flour, baking soda and salt. Stir into the chocolate mixture.

Fold in the white chocolate chunks.


Of course you'll need to taste the batter to make sure they are edible. No? Just me?

Drop dough by the tablespoon full onto a cookie sheet. Bake for 10-12 minutes (they should seem a little underdone).

Let the cookies set up on the cookie sheet for 10 minutes and then move onto a wire rack to finish cooling.
