Maple Bran Muffins (No sugar added!)

These have no sugar what-so-ever and are still perfectly sweetened, thanks to maple syrup. I love muffins, and they are always a winner with Tank. I added a very small amount of mini chocolate chips to a couple. Sassy L is all over them if I call them "Chocolate Chip Muffins". I'll just keep the "bran" part to myself.

Ingredients:
3/4 cup (175 mL) natural wheat bran
1/2 cup (125 mL) milk
1/2 cup (125 mL) Ontario Maple Syrup
1 egg
1/4 cup (50 mL) vegetable oil
1-1/4 cup (325 mL) whole wheat flour
3 tsp (15 mL) baking powder
1/2 tsp (2mL) salt
1/3 cup (75 mL) chopped walnuts or pecans (opt)

Directions:
Preheat oven to 375ºF.
Combine bran, milk and maple syrup and let stand for 10 minutes. Mix in egg and oil.
Combine remaining ingredients and pour into wet mixture. Stir until just combined.

Spoon batter into greased muffin tins.
Bake for 16-18 minutes (or until a toothpick comes out clean).
